Okay, a little late in the day for partridge, but it
had to be done. I bought these frozen in the crazy game, fish, and
bric-a-brac shop in Alnwick. I trussed them as above with a nice thick
slice of pancetta and slowly gilled them over not so hot charcoal for
30-40mins, turning every now and then. Utterly delicious, and very good
cold. "Give me more little bird", demanded bockle major. |

The legs and the remaining bird I cooked in oil with
garlic, a cinammon stick, a bay leaf and chili. I put them in a parfait
jar and boiled it, lid open, in a saucepan of water. Yet to be
sampled.... |
