| Fabada I | Major freezer clear out, with pheasant legs and maybe duck wings, and some year old black and white Portuguese sausage. Cannelloni beans with whole shallots and tomato puree. | |

| These quail beauties were cooked in lobster butter using a similar technique to the quails cooked with pancetta (spell check come up with placenta, thank-you). Next time I might just add the butter to the mash at the end so there isn't the necessity to skim it off the juices before they were reduced to unctuousness. | ||
